Nacho Time!

And here is the nacho recipe from the other night! I didn't follow a recipe but I figured I've eaten them enough times to know what to put in it. It's obviously not very fancy but it gets the job done.

This took less than 30 minutes to put together and it's great for a crowd. You can even chop up all the ingredients ahead of time and assemble right before your guests get there to make it easier on yourself.

Ingredients:
1/2 large bag of corn tortilla chips
1 container (20 oz) of ground turkey (you can use any time of ground meat)
2 Tablespoons chili powder
1 Tablespoon cumin (I actually may have added 1 1/2)
2 teaspoons salt
2 Tablespoons extra virgin olive oil
1/2 head of iceberg lettuce
a container of grape tomatoes (or about 2 cups of any kind of tomatoes)
2 cups shredded cheddar cheese

1 large container of greek yogurt
a jar of salsa

Directions:

Preheat oven to 350 degrees.

Take the tortilla chips and spread it on two medium sized baking sheets.


Take the ground turkey and saute it with the olive oil. Once it's about halfway cooked through, add the chili powder, cumin, and salt.


Chop up the tomatoes, lettuce and shredded the cheese while the turkey is cooking.


Throw everything onto the chips and then pop it in the oven for 10-12 minutes until the cheese is melted.


Perfection!


With the ground turkey, it makes it a little more healthy since it's leaner than beef. We topped it with some salsa and plain greek yogurt instead of sour cream since it's healthier and easier on my tummy :)

Tommy and the girls enjoyed the nachos.
